Tia Betty's re-imagines the best of traditional New Mexican cuisine as it existed a generation ago; making virtually everything from scratch from pure simple ingredients and serving simple and hot green and red chile. New Mexican staples such as breakfast burritos, huevos rancheros, blue corn enchiladas are accompanied by perfectly prepared whole bean pintos and grilled papas. Blue corn waffles served sweet, with a variety of our house-flavored whipped creams or savory with eggs and chile, are a top seller. Not in the mood for chile?
