Brasa's menu is inspired by the creole cooking traditions found throughout North America, The Caribbean, Central and South America. Our food is a celebration of new world and old world ingredients and represents a fusion of many cooking traditions and cultural influences brought to the Americas and Caribbean over the past 500 years. The traditional cooking from West and Central Africa, Western Europe, China & India have influenced the creole table and created a vibrant, fresh and wholesome cuisine like no other in the world. We supply our kitchen with local products, natural, free range and pasture raised meats, eggs & dairy. We also feature organic ingredients, fair trade coffee & tea. Special thanks to our dedicated local farmers and producers: Kadejan Poultry, 1000 Hills Cattle, Heritage Berkshire, Larry Shultz Eggs, Lorentz Meats, Cedar Summit Dairy, Hope Creamery, Dry Weather Creek Farm, Otter Creek Growers, Lost View Farm, Equal Exchange and Peace Coffee.
