Cormier’s Cajun Restaurant opened in 1989 by Larry Cormier. Larry was a rice farmer who loved to cook and entertain. He learned the love of cooking from his Cajun mother on their farm in Laccassine, Louisiana. He moved to north Louisiana after leasing farm land for rice farming. He began cooking for the local farmers, associates and friends. People began asking him to cater events and that’s when the restaurant was born. The restaurant was started in an old gas station and has been a work in progress since it opened. Outside picnic tables, heating, and fans have been added along the way. The restaurant has been voted, by the public, “Best Boiled Crawfish” every year that its been open. It also features a pulled pork sandwich that is Larry’s special recipe called the Pig Sandwich which has a unique blend of meat and cabbage (it’s a local favorite). During Thanksgiving and Christmas holidays we fry Cajun Turkeys. The Turkeys are injected with Larry’s special blend of spices and then deep fried. Most are consumed with Larry’s famous mustard sauce. The menu at Cormier’s reflects Larry’s Cajun heritage. Red Beans and rice, Ettouffee, Gumbo, Po-boys and Boudin are all made from scratch.
