Architecturally, Preserved Restaurant has retained the original structure, which was built between 1865 and 1885. It's one of the oldest houses in Lincolnville. In 1892, President Thomas Jefferson's great granddaughter, Maria Jefferson Shine, lived in the house with her husband, Dr. William F. Shine, president of the county's Board of Health. She founded the Jefferson Chapter of the Daughters of the American Revolution, who after her death renamed the chapter for her.
