Established in 2013. Albert Allaham, the owner of Reserve Cut, is a master butcher and the owner of high-end meat market The Prime Cut in Brooklyn, which serves top quality meats to customers throughout the New York area. He descends from a long line of expert butchers dating back over 200 years to Damascus in Syria, where his family ran one of the country's most respected butcher shops. Continuing this tradition, they opened a gourmet meat shop in Brooklyn in 2004.
