Chef Shinji's style is his creation of sauces to accompany the different flavors of fish. Rather than having to use soy sauce the guests get to enjoy Chef Shinji-san various varieties of sauces such as; yuzu soy, truflle oil, garlic olive oil, citrus ponzu, apple vinaigrette and much much more. Chef Hiro once Head Chef at Nobu Hard Rock runs the kitchen. He uses both traditional Japanese methods in his sauces with flair of "new style" or "new world" flavors. The filet mignon tataki vs the grilled fillet mignon with bell pepper sauces shows his versatility.
