Carlos, born and raised in Lima-Peru has had an interest in culinary arts since very young. In 2011, he decided to move to Miami, which is where his wife Michelle was from. She convinced him to relocate to her hometown, as she knew that the love and passion he had for food and the kitchen would without a doubt make his dream come true. Shortly after in 2012 Carlos and Michelle founded Taipa, which began in a food truck. 5 years later after lots of hard work and dedication they were able to open their first restaurant. Taipa has been one of the few restaurants in the market who has kept the Traditional & Authentic Peruvian dishes that have taken after the restaurant's name, Taipa, which is a Peruvian slang word that means “Well Served”.
